Jacket Potatoes

The other day we had jacket potatoes for tea, and very yummy they were too.
As per usual though, I had cooked too many, so I squirrelled them away in the fridge, although I had no idea what to do with them.
Next day my hubby went away on a course so I thought I would use them up and this is what I came up with.


I chopped my jacket potatoes up into wedges.  Then  thinly sliced half an onion, a couple of cloves of garlic (I love garlic!!) and some fennel I found at the back of the fridge.  I fried the onion, garlic and fennel slowly until they were soft and then I added the potatoes and cooked until they were warmed through and getting crispy on the outside.  

Finally I added some salt and pepper put my potatoes on a plate and sprinkled Parmesan on top.

Now I know this sounds like a bizarre concoction but to be honest I quite liked it.


Now all that is left to do is get some more ideas from you lot.  How do you use up your left over jacket potatoes?

  1. I love to have leftover baked potatoes to fry up the next day. I don't add onions, just salt and pepper, and we eat them for breakfast. Love 'em!

    1. Hi Debbie
      We call them jacket potaoes in the UK but I think other places call them baked potatoes. Basically they are big potatoes cooked in their skins in the oven for about 1 1/2 to 2 hours.

  3. I just about to ask what are Jacket Potatoes and then I saw someone already did. You call them Jackets! I love it. Potatoes don't usually last long enough for leftovers in my household.
